Timbre is an absolute superb restaurant everyone should visit. If I could eat only on thing for the rest of my life it might just be the flatbread and butter at Timbre. It might be a short life with that amount of cholesterol, but it would be a happy one. I also had the wood fired chicken with salsa verde. Chicken is so often overcooked and left dry and tasteless but this was superbly done, the skin crisp and the meat tender. I also had an excellent potato salad. My only quibble was that the service, whilst very friendly and welcoming, was occasionally inattentive - I was forgotten about twice and at the end of my meal with my affogate having sat on my table for 15 minutes I had to get up and go in search of my bill. However that did little to spoil my enjoyment - the excellent view and the superb wine from the sister shop complemented the meal excellently. A place I will recommend to anyone that will listen.
Out past Launceston, where the light softens and the vines start to hum, sits Timbre Kitchen, a place that doesn’t shout, but doesn’t need to. Set among the Vélo vines, it’s all sun, timber, and that quiet confidence that comes from knowing exactly what you are. The room breathes light filled, loose, alive. Service moves the same way: sharp, warm, no theatre, just people who care. Book ahead or don’t bother. This place fills up for a reason. The food? Inventive without being precious. Wood fired bread with kefir butter that hits like a memory you forgot you had. Potato cakes crisp, rich, topped with caviar because why the hell not. Snapper, butter sauce, tomatoes singing of the soil they came from. Even the chips golden, unapologetic. A bottle of Milton Pinot Noir ties it all together local, expressive, exactly where it should be. This is ultra seasonal cooking without the sermon. Regenerative ideas, fresh produce, serious intent, but it all lands as something simple: bloody good food, done right, in a place that feels like it belongs. 10/10
Vineyard views, we had the set menu and tried some local wines, it was good. Service was friendly and attentive without fuss, and everything arrived at a comfortable rhythm. If you enjoy relaxed regional dining with good local wine, this one’s for you 🤌
We have eaten at Timbre a few times over the last couple of years and every time it has been sublime. The food which is locally sourced is so fresh, flavourful & exquisitely prepared. The service is top notch, so friendly & attentive. We have been served by Dylan & Chris (not sure of how her name is spelt) the last two times & they are both incredible. We cannot recommend Timbre highly enough & can’t wait for our next visit!
I’m not usually one for fancy dining, but we decided to treat ourselves on New Year’s Day and by golly, we did. Without any exaggeration, this was some of the best food I’ve ever had. I came with seven mates from Melbourne, so we ordered a bit of everything and shared. The mains we had (lamb and chicken) were unreal, and every single side right down to the bread and the chips, it was all outstanding. Our waiter James was fantastic and gave me a great wine recommendation, and the rest of the staff were just as elite — sorry I didn’t catch your names, but you all deserve credit. I’d highly recommend this place to anyone visiting Launceston. Thank you for an amazing experience and such a great start to 2026.
